Head chef and host of Victor’s FINE DINING since 1998, Christian Bau, made a strong impression right from the start, gaining his first Michelin star in his first year. Just seven years later, he became Germany’s youngest three-star chef – and has remained at those Olympian heights ever since.

After completing his culinary studies, Christian found his first mentor in Harald Wohlfahrt and began to impress with his execution of classic French cuisine. But it was not until he travelled in South East Asia that he began to develop the inimitable style for which he is known today. He was in fact one of the first chefs to combine haute cuisine with Japanese products.

But this was not the only area where he proved to be a natural innovator. His carte blanche concept was a pioneering approach, while his 4 Hands Dinners saw him working alongside other top chefs such as Jan Hartwig, Simon Taxacher, Sergio Herman, Nick Bril and Hans Neuner. Bau’s motto? ‘Do things with passion or not at all.’ He cooks with joy and commitment, day after day – and that is reflected in his dishes.

Christian Bau’s characteristic, fully autonomic kitchen style consists of an enormous complexity of aromas on the one hand whilst remaining easily accessible on the other hand. Christian Bau is a specialist for fish and seafood. By using elements of the Japanese dining culture, he creates taste patterns that are equally sophisticated and harmoniously stimulating. They include his  exceptional  sense  for  top quality  and freshness.

Victor’s FINE DINING by Christian Bau: dining as a cultural experience

A dedicated team. An exclusive ambience. Unique culinary creations. These are the hallmarks of Victor’s FINE DINING by Christian Bau. The three-star restaurant is located in a renaissance castle in the Obermosel region of south-western Germany, only a few miles away from Luxemburg and France. It’s continuously attracting guests from all over the world.

Head chef and host Christian Bau steadily strives to develop his art of cooking and to be a perfect host to his guests at all times. “The cordial service combined with the ambience of the castle ensures that every stay is as memorable as a visit to a great concert”, says Christian Bau.

Bau’s menus read like a map of the world, with unique dishes created from exquisite ingredients, from exotic shellfish and seafood to meat-based dishes to stunning desserts. Accompanied, of course, by matching wines. Nina Mann, sommelier of the year 2016 (Falstaff), is responsible for the perfect wine pairing.

To Christian Bau, the service is part of the cultural experience at his restaurant. As head of the restaurant, his wife Yildiz ensures that the service is upheld. Her charm provides a sophisticated but surprisingly easy-going and uncomplicated feel-good atmosphere.

Victor’s FINE DINING by Christian Bau is part of Victor’s Residenz-Hotel Schloss Berg. The five-star-superior hotel delights its guests with the highest comfort and a unique location amidst vineyards in the border triangle between Germany, Luxembourg, and France. It offers an exclusive spa, the beauty farm Victor’s Spa, and invites guests to enjoy a number of year-round recreational opportunities such as boat trips on the rivers Moselle and Saar, cycling, golfing, and tennis, as well as shopping trips to France or Luxembourg – and wine tasting at some of the world’s best winemakers .
