In an increasingly competitive market, Chef Alexandre Silva stands out for its irreverence, reativity and innovation. At this moment, he has two spaces, with completely different concepts: LOCO, his signature cuisine with only 22 seats, which has 1 * Michelin, won 8 months after the opening; and FOGO, which opened in December 2019. He studied F&B Cooking and Management and Management at the Lisbon School of Tourism and Hospitality and Molecular Gastronomy at the Instituto Superior de Agronomia. His career began in 2007 as an Executive Chef at the Bocca restaurant in Singapore, but he quickly became known as the winner of the first professional chef’s contest in Portugal – Top Chef – which debuted on RTP1 in 2012. The contest opened doors for a season in one of the best restaurants in the world, El Celler de Can Roca, Spain.
In 2012, he moved to Alentejo, inaugurating the Alentejo Marmóris Hotel & Spa, also as Executive Chef. He returned to Lisbon in 2013, to take over the direction of one of the most famous restaurants in Portugal, Bica do Sapato and, shortly after, opened his first private business, Alexandre Silva no Mercado. Subsequently, he presented the television program A Guerra dos Pratos, on the FOX channel.
At the end of 2015, LOCO had a soft opening and developed the I&D project – Innovation and Development – an experimental laboratory where it developed new techniques, tested new products and produced new creations. In 2016, only 8 months after the opening, LOCO received the highest decoration in the restaurant area – the Michelin Star, thus being in the history of the few restaurants in the world to win a star so close to the opening date. At the end of that year, he also received the Special Award for the highlights of the year by Mesa Marcada, the Golden Fork by Guia de Boa Cama Boa Mesa, of the Expresso newspaper, which has a selection of the best restaurants and accommodation in Portugal and an award from Time Out in the Restaurant of the Year category. In 2017, it won the Platinum Fork and Chef of the Year – the two awards corresponding to the best of the year in these two categories.
In 2019, Chef Alexandre opened a new space – FOGO. FOGO recovers the memory of a country that has always had fire as a faithful gastronomically, recaptures the characteristic flavour that smoke and wood gave to the cooking of our grandmothers and emphasises respect for the product that reaches our plates every day. More than a concept, FOGO represents a culture, an ideal and a way of life that Alexandre shares with all Portuguese people.
