Early days

Born on 29 October 1978 in Auvergne, Clermont Ferrand, France. Arnaud gained his passion for the cuisine from his grandparents. He enjoyed helping them in the kitchen, loved to grow vegetables and fruits in the garden, and appreciated the flavours of the freshest food, simply prepared.

Career

Arnaud started his career after a BEP & Bac pro apprenticeship, in 1999. Successively in Relais & Châteaux properties of Moulin de la Gorce in the heart of the Limousin (2 stars Michelin), at Pyramide in Vienne (2 stars), at Buerehiesel of Antoine Westermann (3 stars) and Relais Bernard Loiseau (3 stars).

Arnaud’s first position as chef came in 2007 when he took over the kitchen at restaurant l’Espadon, in the famous and luxury 5 stars Hotel Ritz, place Vendôme. Two years later, the restaurant was awarded two stars in the Michelin Red Guide. His first gastronomic recognition working alongside Executive Chef Michel Roth, with whom he also participated to the realization of the illustrated book Ritz Paris Haute Cuisine recipes.

Arnaud joined beginning of 2011 the Asian Mandarin Oriental Hotel group with the opening of the newest 5-star Parisian property Mandarin Oriental Paris. Mandarin Oriental Paris was awarded in the Michelin Red Guide with 2 stars less than one year after opening.

Mid-year, in 2012, he started a great new challenge as Head Chef of the new 5-star property Auberge du Jeu de Paume – opening sept 2012 -, part of His Highness the Aga Khan IV complex including the foundation for the protection and development of the Domaine de Chantilly, town of princes and capital of the horses. The hotel features 92 rooms, two restaurants including a gastronomic restaurant, and an exclusive Spa. Arnaud Faye was awarded Michelin Chef and obtained his 1st Michelin star in March 2013 and his 2nd Michelin star in March 2014, confirmed in 2015 and 2016. The Auberge du Jeu de Paume joined the renowned association Relais & Châteaux and is awarded by the Grand Prix Villegiature in october 2013 as Best Restaurant in Europe.

In July 2016, Arnaud Faye joined the Relais & Châteaux La Chèvre d’Or also member of the prestigious association Les Grandes Tables du Monde. He oversees the management of the hotel’s four restaurants, and in particular «La Chèvre d’Or», its gourmet restaurant. He was awarded by the Michelin Red guide with two stars in February 2017. At La Chèvre d’Or, Arnaud Faye celebrates the authenticity of an exceptional terroir, which stretches
from the rocky foothills of the Mercantour to the intense blue waters of the Mediterranean Sea. His menu, inspired from these contrasts, magnifies the products of the Riviera and the up-country. Arnaud has created a style that is uniquely his own, at once classic linked to the nature and the regionality
of high quality products, thanks to the professionalism and passion of food producers.

These stages working under the guidance of the masters were formative and important years for Arnaud, where he developed his professional knowledge and cuisine influence, discipline, precision and perfection and the importance of the regionality. Michelin-starred Chefs Pierre Bertranet, Patrick Henriroux, Antoine Westermann.
• Patrick Bertron, Relais Bernard Loiseau: Arnaud likes his sensibility of the product, his personal approach and interpretation of the cooking and own food universe.
• Michel Roth, Ritz Paris: Arnaud likes his trust and daily support to his teams, his large human quality and knowledge management and transmission to the future Chef generation.
