AFTER A PHILOSOPHY GRADUATION IN PARIS, CHIARA PAVAN’S KITCHEN CARRER START AT ALMA, GULTIERO MARCHESI SCHOOL, IN PARMA AND THEN AT “DA CAINO”, A 2 MICHELIN STAR RESTAURANT IN TUSCANY. FROM TUSCANY CHIARA PAVAN MOVED TO “ZUM LOWEN” AS SOUS CHEF IN 2014 IN SUD TIROL, BEFORE MEETING FRANCESCO. WITH HIM SHE RENOVATES THE VISION OF LAGOON CUSINE, WORKING ON PRESERVATION AND VALORIZATION OF INDIGENOUS HERBS, FISH AND VEGETABLES, ALSO THROUGH COLLABORATION WITH BIOLOGIST, FARMER, HUNTER AND OLD MAN BORN IN THE ISLAND.
