Franckelie Laloum Executive Chef, Louise 

With a culinary legacy spanning over two decades, chef Franckelie Laloum opened Louise in 2019, a restaurant whose fresh approach to traditional French cuisine in a beautiful heritage-listed location harmonizes fine dining with delicious homegrown French cooking, awarded 1 michelin after 6 months opening. Taking on the role as Executive Chef, Franckelie relocates from Tokyo, where he earned the renowned Ritz Carlton hotel’s Azure 45 with its first Michelin-star.

Leading the hotel’s multiple restaurant endeavors to culinary acclaim from 2014-2019, chef Laloum’s extensive experience cooking French cuisine both in Asia and across the world make him a strong culinary leader to take the helm at Louise

Prior to his tenure in Tokyo, from 2011 – 2014, he was the Chef de Cuisine at Shangri-La Shanghai’s Jade on 36. Enabling him to imbue this great restaurant with his own culinary philosophies and savoir-faire, chef Laloum guided the restaurant to its place on Asia’s 50 Best Restaurants and establishing it as Best Hotel Dining in Shanghai in 2013.

From 2010-2011, whilst still in France, chef Laloum was the Chef de Cuisine at the lauded, three-Michelin starred, Maison Pic where he honed his techniques in French fine dining from the elite French cooking family. Working in tandem with the celebrated Anne-Sophie Pic, he helped to design menus and execute perfectly-cooked dishes that were the epitome of French fine dining.

Over the length of his career, chef Franckelie Laloum has worked across France in cities such as Paris at Pavillon Ledoyen 3 michelin stars, Cannes La Palme d’Or 2 michelin stars, Cannes La Villa des Lys 2 michelin stars, Shanghai and Tokyo, finally embarking on his next culinary venture in the kitchens at Louise in Hong Kong. Within 6 months of opening, Louise received it’s first MICHELIN star and has retained it ever since.
