Woman. Chef. Mother of two and the owner of her restaurants with her partner Rosario Onetto. Carolina Bazan,  named as Latin America’s Best Female Chef 2019, has spent all her life dismantling stereotypes in gastronomy and beyond. Worldwide Training

Coming from a traveled and foodie background Carolina Bazan chose to devote herself to gastronomy. In 2003 after finishing her studies in Chile, with her family she opened the first Ambrosia downtown in Santiago. In between she staged in Perú, Brasil, Italy and finally and more compromised in 2011 she spent one year studying in Paris and then learning from chef Gregory Marchand in Frenchie Restaurant.

Birth of Ambrosia

Back in Chile, in 2012, Carolina Bazan and her partner, sommelier Rosario Onetto, began the first Hidden Kitchen movement in Santiago, which finally led to Ambrosia’s new location and new concept. The result is a modern family Bistro, outside of the classic gastronomic circuit, where fresh market products leads a menu that changes daily according to what’s in season.

A locavore experience that combines French flair with Chilean produce, clean yet homely flavours fuse together in impeccable fashion. Fresh oysters with orange butter; homemade pasta with Chilean truffle and egg yolk; wild deer with mushroom purée and vegetables.

The goal is to give an amazing dinning experience, showing not only good food but also fresh, seasonal ingredients paired with a grand variety of wines, and music, and good old hospitality. Welcome to the new Bistronomy in Santiago.

Rising star

In 2017, Carolina and Rosario opened their own Ambrosia Bistro, located downtown with a very hip vibe, but maintaining the idea of working a seasonal menu, simple, but focusing on very tasty food. In 2019, Carolina Bazan continues her ascendance by receiving Latin America’s Best Female Chef Award.
